The pistons and crankshaft are not included. The cylinder walls are very smooth and retain their original crosshatch honing throughout. The cooling passages are mostly clean, though there is some rust that should be cleaned, primarily around the water pump flange area. Production for the "model year" usually begins in September of the previous calendar year, so if you have a 1995 model BMW it will have been produced anywhere between 9/94 - 8/95. Some cars begin their production earlier than September, such as the first year production for a new model.
